Oat Milk Chia Pudding with Macerated Berries

Ingredients
  

For Oat Milk Chia Pudding

  • 2 cups oat milk or milk of your choice
  • ½ cup chia seeds
  • 1 Tablespoon honey
  • 2 teaspoon vanilla extract

For Macerated Berries

  • 2 cups berries (strawberries, blueberries, raspberries or blackberries) fresh or frozen
  • 2 Tablespoons granulated sugar

For Topping

  • Granola
  • Fresh berries
  • Drizzle of honey

Instructions
 

For Oat Milk Chia Pudding

  • Add chia seeds, oat milk, honey and vanilla extract to a bowl and stir to combine. Let sit for 10 minutes and stir again to break up any clumps.
  • Cover with plastic wrap and refrigerate for at least 1 hour.
  • Stir again before serving to break up any clumps.

For Macerated Berries

  • Add 2 cups berries to a small mixing bowl. If fruit is frozen, thaw to room temperature. Crush berries to your desired consistency (I like to leave some chunks for texture).
  • Sprinkle berries with 2 Tablespoons granulated sugar. Let sit for at least 15 minutes to draw the juices out of the fruit, then stir to combine.

For Serving

  • To serve, add a spoonful of macerated berries (about ¼ cup) to the bottom of a serving glass or bowl. Cover with about ½ cup of Oat Milk Chia Pudding. Top with granola, fresh berries, and a drizzle of honey. Enjoy!
