Avocado Toast with Tomato

Ingredients
  

  • 3 slices bacon
  • 4 slices crusty bread toasted
  • 2 avocados ripe
  • 2 Roma tomatoes sliced
  • 1 teaspoon lemon juice
  • flaky sea salt & black pepper to taste
  • fresh basil shredded, for garnish

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with aluminum foil and spread the bacon on the sheet. Bake for 15-18 minutes, or until desired crispness. Drain on a plate lined with paper towels and let cool.
  • Toast your sliced bread and set aside to cool slightly.
  • Halve your avocado and remove the seed. Use a spoon to remove the avocado from the skin. Place ½ an avocado on a piece of toast. Use the back of a fork to mash the avocado directly on the toast.
  • Drizzle with lemon juice, then add sliced tomatoes in a layer on top of the avocado. Sprinkle with crumbled bacon, salt, pepper and red pepper flakes.
  • Place tomato slices on top of avocado. Sprinkle with salt, pepper and shredded fresh basil.
