Mix dry ingredients in the stand mixer

Add wet ingredients until shaggy dough forms

Knead until smooth and transfer to a large, oiled bowl

Let rise 90 minutes

Divide into 8-10 pieces

Roll each piece into a ball

Use your thumb to press and stretch a hole in the center of each

Let rest for 20 minutes

Boil 20-30 seconds on each side

Brush with egg wash

Bake 20-25 minutes
