Blackberry Marshmallows

Gather your ingredients

Add berries, 2 Tbsp sugar and lemon juice to a saucepan

Simmer for 10 minutes, then chill

Combine berry compote, cold water and gelatin in the mixing bowl

Bring sugar, corn syrup and water to a boil 

Boil until 240 degrees F

Pour the sugar mixture into the stand mixer and whip for 8-10 minutes

Spread into an 8x8in baking pan

Let firm, then slice into 16 pieces

Toss each piece in powdered sugar

Great on their own or in s'mores!
